At Cantalauze Estate, winemakers Pauline and Pierre-Olivier welcome you to discover their family-owned vineyard, located on the limestone plateau of Cordes-sur-Ciel and organically farmed since 1982.

.Visit of the vineyards and presentation of an organic farming approach where biodiversity has been developed for over 40 years. This includes gentle vine training and pruning that respect the vine’s physiology, precise soil work without ploughing, and the planting of hedgerows since the 1980s.

Visit of the cellar with a presentation of high-quality equipment: grape reception, winemaking, ageing, notably in egg-shaped terracotta and stoneware amphorae, as well as the disgorging workshop and traditional riddling racks.

Wine tasting of the full range, showcasing the native grape varieties of Gaillac, from the Ancestral Method to wines aged under veil, with different ageing methods: in tanks, barrels or amphorae.

“When we welcome you to the estate, we are keen to share the care we give to all living elements at every stage: from the soil and vine physiology, to hand-harvested grapes transported in small crates and on conveyor belts, juices transferred by peristaltic pumping, the choice of materials for our cellar, and the manual work involved in pruning, debudding and disgorging. This precision and attention are reflected in the tasting, resulting in clean, precise and expressive wines."
