L’Atelier de Courbière

We are Christian, Sébastien and Audrey from the Atelier de Courbière, located on the border between the Tarn and Aveyron, in Assac.
A small village at the top of the Tarn valley, surrounded by windmills & a new hike this year!

We produce milk for the Roquefort PDO, since the beginning of this cheese, we are attached to this quality chain which has developed our region since 1956.
Our farm is run under sustainable agriculture, in accordance with the PDO specifications. Our 380 Lacaune milk ewes graze as soon as the weather permits, and in the sheepfold they eat hay that we produce on the farm. This hay is of high quality, as it is dried in the barn, so it is much richer in flowers. This self-consumption is important because it reinforces the link between the territory and the milk and adds to the flavour of our products.
Since 2019, we have built a processing workshop to favour short circuits and to be able to process our raw sheep's milk cheese & our whole sheep's milk ice creams.

PS: there are also yoghurts and bottled milk for sale at the farm!

See you at the farm on Wednesdays and Thursdays from 10am to 12pm or at the Arthès market on Saturday mornings!
