Chez Pepone is first and foremost an artisanal pizzeria born in Naples. You come here to taste a "napoletana" pizza, authentic, with a home-made dough.
All our Neapolitan pizzas are baked between 60 and 90 seconds at 500 degrees, in a refractory stone oven made in Naples by a fourth generation family of artisans.
Our dough, made with organic flour from the Rivieres mill, rests for 72 hours until it is double-fermented, resulting in a thin, soft and elastic pizza with thick, chewy edges and a texture you won't forget.
