Located on the Monts d'Alban, the Paulinétoises farm raises a herd of 700 dairy ewes with cheese processing (sweet, fruity and even sweet flavours).
The cheeses are made on site from milk produced exclusively on the farm. Curdling, moulding, draining, salting, pressing and maturing help to transform the milk into a rich palette of ewe's milk cheeses, butter, yoghurts, dessert creams and cakes.
The products are: lactic (briquettes), soft rennet (heart, pavé, pérail), tomettes, tommes, brousse (recooked), flaune, butter, milk jam, yoghurt and dessert creams made from sheep's milk...
