After more than 10 years' training, from the CAP to the brevet de Maitrise, and winning the prize for the best chocolate candy in Toulouse, at the age of 26, in 2012, I set up my chocolate factory
to share my passion.
Cocoa is a gift from nature, and the work of the planters must be honoured by the production of a high-quality finished product. It takes 4 days of patience to make a chocolate bonbon without artificial flavouring, and time is the secret of taste. I meticulously select my raw materials and only use wedding vintage or pure country chocolate couvertures. My team and I make all our pralines in the traditional way, using natural flavours such as Madagascar vanilla pods, fruit pulp, fresh mint, coffee beans, tea leaves, honey, etc.
I'm a native of Albi, so my recipes are directly inspired by gourmet desserts and cocktails, as well as by the history and traditions of the Tarn region.
For your enjoyment, I strive to bring together the best of nature's work with my knowledge, and for my own pleasure, I'm discovering new things every day.
To delight you all summer long, we trained in the art of ice-cream making with a ‘meilleur Ouvrier de France’ ice-cream makerof sorbets and ice creams. We've created a recipe for gluten-free croquants, available all year round, in a range of flavours including almond, hazelnut and chestnut....
