Virginie Combettes decided to make healthy, organic cookies for her business, “Les biscuits de la bécasse.” The name “bécasse” came naturally to this bubbly young woman who loves nature and birds, “because this little bird is much smarter than it seems.”
After traveling extensively around the world following her studies in environmental science, this 37-year-old native of Aveyron settled in Saint-Sulpice-la-Pointe with the intention of taking time to enjoy life, raising her two children—including a “little snipe” born just recently—and getting to know the local people.
Virginie Combettes currently offers three lines of ten different cookies made with grains or dried fruit. “I’ve developed indulgent recipes by reducing the sugar and butter content, so you can satisfy a small craving without feeling weighed down or guilty.” Her shortbread cookies—available in lemon, chocolate, and walnut flavors—are delicious, while the oat squares with flaxseed or hazelnuts have their own loyal fans. Not to mention her signature cookie, “La bécassine.”
All these treats keep easily for two or three months when stored away from air and light—unless, of course, your sweet tooth gets the better of you and ends up emptying your cookie jar. In that case, you’ll have to head back to Les biscuits de la Bécasse at 5 Impasse des Prunus.
